    Prepare the Tofu and Veggies

    Heat 1 tbsp oil in a skillet over medium-high heat. Add the tofu batons with a pinch of salt and sear for 6 to 8 minutes, turning occasionally, until golden and crisp on all sides. Remove and let cool slightly.

    Julienne the cucumber and carrots, and thinly shred the red cabbage.

    Make the Peanut Butter Sauce

    In a small bowl, whisk together the peanut butter, maple syrup, lime juice, soy sauce, and chilli.
