Litchi Matcha
A fragrant, layered summer cooler blending sweet KwaZulu-Natal litchis, creamy coconut milk, and ceremonial matcha over frozen litchi ice cubes.
Earthy matcha, floral litchis, and silky coconut milk make an elite flavour combination. Fresh litchi flesh is blended directly into rich coconut milk, poured over sweet frozen litchi juice ice cubes, and crowned with a warm layer of freshly whisked ceremonial matcha.

Method

Blend Litchi Coconut Milk
In a blender or small food processor, combine 6 to 8 peeled and deseeded fresh litchis with 125 ml coconut milk.

Blend on high speed for 30–45 seconds until silky smooth and frothy, then set aside.

Whisk Ceremonial Matcha
Sift 1 tsp ceremonial matcha powder into a small bowl or spouted jug to remove any clumps.
