Rooibos & Grapefruit Iced Tea

A crisp, ruby-red South African iced tea brewed with rooibos, simmered berries, and fresh tart grapefruit juice.

Did you know rooibos only grows in one place in the world—the mountains of South Africa? Naturally caffeine-free, rich in antioxidants, and gut-friendly, rooibos makes the ultimate base for a refreshing summer cooler. Real rooibos is simmered together with mixed berries to extract deep fruitiness and colour, then blended with fresh tart pink grapefruit juice and honey for a crisp, hydrating iced tea. Before you start

Get your mise en place ready so nothing catches you out mid-cook.

Method

    Simmer Rooibos & Berries

    In a medium saucepan, bring 1 litre of water to a boil. Add 4 rooibos tea bags and 150 g mixed wild berries to the boiling water.

    Reduce the heat to medium-low and gently simmer for 10 minutes, lightly pressing the berries against the side of the pot with a wooden spoon to release their juices and vibrant ruby colour.

    Strain, Sweeten & Dilute

    Strain the warm tea through a fine-mesh sieve into a large heat-proof jug or pitcher, gently pressing the berry pulp to extract all the liquid, then discard the tea bags and solids.
