Crispy Garlic Chilli Shiitake "Chicken"
Crispy batter-fried shiitake mushrooms tossed in a sticky, sweet, and fiery Indo-Chinese garlic chilli glaze.
Crispy, spicy, garlicky shiitake mushrooms that taste even better than chicken. Fleshy shiitake mushrooms are coated in a light batter, fried until shatteringly crisp, and tossed with crunchy onions, bell peppers, and a glossy, garlic-infused chilli sauce.

Method
- 1
Prepare & Fry Mushrooms
In a large mixing bowl, whisk together 1 cup all-purpose flour, 1 tsp baking powder, ½ tsp salt, and ½ tsp black pepper. Gradually pour in ¾ cup water while whisking until a thick, smooth batter forms.
- 2
Add the prepared shiitake mushroom pieces to the batter, tossing well so every piece is thoroughly coated.
- 3
Heat oil in a deep pan over medium-high heat until hot. Carefully drop the battered mushrooms into the hot oil in batches and fry for 4–5 minutes until deep golden and crispy. Remove with a slotted spoon and drain on paper towels.

Ivana’s note
Shiitake mushrooms have a rich, meaty texture that naturally mimics chicken when fried in a thick, seasoned batter.
