Baked Guavas with Whipped Feta

Sweet, jammy roasted guavas layered over velvety garlic-tahini whipped feta and finished with aromatic pan juices.

This baked guava and whipped feta situation is one of my favourite ways to use fruit that is a little overripe. Sweet, savoury, jammy, and creamy, it is everything you want on a slice of toasted bread. Perfect for late afternoons, sharing plates, or honestly, dinner.

Before you start

Method

    Roast Guavas

    Arrange the quartered guavas cut-side up in a single layer in a ceramic baking dish. Drizzle over 2 tbsp Cape fynbos olive oil, 1 tbsp tomato balsamic vinegar, and 1 tbsp honey.

    Season evenly with ½ tsp coriander and black pepper salt, and scatter 3 fresh thyme sprigs across the top.

    Bake at 200°C for 15–20 minutes until the guavas are tender, sticky, slightly caramelised, and bubbling in their sweet pan juices.
