    Boil the Potatoes

    Place 800 g washed baby potatoes into a large pot, cover generously with cold water, and add 1 tsp salt and ½ tsp bicarbonate of soda.

    Bring to a rolling boil over high heat, then reduce to medium and boil for 15 minutes until fork-tender throughout.

    Drain the potatoes thoroughly in a colander and let them sit for 3–5 minutes to steam dry completely.
